Chef Douglas Katz will lead the menu at Ettore, an Italian restaurant planned for downtown Cleveland in early 2028. Named for chef Ettore Boiardi, known as Chef Boyardee, it is slated for the Rose Building, where he once ran the Chef Hector Restaurant.
Ettore is part of the $120 million Project Scarlet redevelopment at East Ninth Street and Prospect Avenue, which will renovate the historic Rose and Sloan buildings and include a hotel and luxury apartments. Katz plans to source produce locally, and the team describes the concept as comfortable, elevated neighborhood Italian. Project partner Bhavin Patel said he expects the restaurant to sell sauces as a nod to Boiardi, who became known for selling his sauces in milk bottles.
